Gray patches on my skin that, when scratched, produce dry, almost granular contents first appeared on ankles... Now higher on legs. Any ideas?

In brief: Dry flaky leg skin
Given the description it sounds as if you may have hyperkeratosis associated with venous stasis dermatitis but that is only a guess.
Gentle exfoliation, moisturizers and support hose (medical grade) could help but i would seek the advice of a dermatologist or your primary care physician.
