Can someone gets genital herpes w/o any sort of sexual activity? I know it can happen from birth, but how about toilets and towels?

Not from toilets. "You will not get herpes from toilet seats, bedding, or swimming pools, or from touching objects around you such as silverware, soap, or towels." REF: https://www.cdc.gov/std/herpes/stdfact-herpes.htm It can be spread through saliva or skin contact with or without obvious lesions.

Had sexual activity via hand and penis of partner who gets genital herpes. Then changed baby's nappy forgetting to wash hands. Will my baby catch it?

No. Herpes spreads by skin-to-skin direct contact, ie, directly from the site of infection to the site of contact. Cloth, etc in-between interrupts it as does air/time.
