Is it possible for a breast apocrine cyst to turn cancerous following core biopsy?

Not due to Biopsy. Doing a biopsy of any tumor does not change its nature. So you do not have to worry about the biopsy causing breast Cancer. it will reveal what you already have: either a benign condition or Cancer. This is determined by examination of the biopsy material(tissue) under the microscope. Good luck.

Mri biopsy of 6cm non mass : variable fibroadipose tissue and a tiny cyst lined by epocrine metaplasia. Is this benign breast disease or missed cancer?

The biopsy. results are benign. The radiologist will need to determine whether those results are consistent with, or could account for, the MRI finding, and also assess the technical accuracy of the biopsy. That having been said, a 6cm area would be hard to miss on biopsy. Moreover, such a large area of non mass enhancement without mammo or ultrasound correlate is very likely to be benign breast tissue.
