Does WBC (5.2K), Pt (1.5L) & ESR (29) eliminates risk of tumor, cancer or GI bleeding while Hb (11.1), RBC (3.75) & Ferritin (39) for 57 yr old female?

Maybe? None of these labs tests rules anything out or in. Tumors and GI bleeding are generally suspected by history / symptoms and simple exam. Lab data can help confirm but the labs you show wouldn't confirm anything.
Hb and ferritin low. The hemoglobin and ferritin are low, and low-normal, respectively. I would do an evaluation for blood loss in the stool. For a female who is menstruating, menstrual blood losses can contribute to this. At age 57, it could be still menstruation (unlikely), or more likely GI blood losses.
