In brief: Depends

I depends on how bad you felt to start with.
At least a week but perhaps a month.

In brief: Wait on Gastritis

So many people do not have pain, irritation or gastritis from "hot sauces and foods" that you should look at the alcohol, a known cause of gastritis.
Consider not using alcohol at all, but if you feel that you need to use some alcohol, you may need to check with a gastroenterologist to have your stomach check with a scope and other tests done.
