Great Question. That is a great question and one that is up for debate at every national allergy meeting as we are seeing more and more people diagnosed with food allergies every day. Unfortunately the best minds in the field have yet to come to a consensus and therefore we don't have any way yet of preventing the development of food allergies in children or adults. Over active immunity. When the immune system "thinks" a food protein is "foreign" it over-reacts and causes an allergic reaction.
Mistaken Identity. The part of the immune system involved in allergy is the part that we need to defend our bodies against large parasites such as tapeworm. In absence of parasites, the immune system looks for other targets - that is allergy.
