In brief: Diet is not key

Despite all the huckstering, avoiding meat won't prevent your diabetes from manifesting and ruining your health.

Does not look too bad, your diet is excellent, so adding more consistent physical activity will do the trick, Best Wishes, stay moving!

In brief: High numbers

The numbers are not good but can be corrected without too much difficulty.
Please have your doctor refer you to a dietian, and also consider a visit to a trainer.

In brief: Pre-diabetes

Much more concerning is your A1c level which indicates that you are prediabetic.
You have better than 50% chance of preventing diabetes by losing 10% body weight and exercising at least 150 minutes/day. See this site for information on A1c and consult your doctor. http://www.mayoclinic.org/tests-procedures/a1c-test/basics/results/PRC-20012585
