In brief: Probiotic and enzyme

If you have accidentally eaten a food that causes gas, bloating or diarrhea, you might try high dose probiotic of 50-100billion cfus and a digestive enzyme with meals.
The fodmaps diet might also be helpful http://doccarnahan.Blogspot.Com/2011/09/fodmaps-diet-that-may-eliminate-your.Html.

In brief: Avoid gluten

Avoiding gluten is the best and probably the only thing you can do for celiac.
For ibs try to avoid food that you know irritate your bowel and try to pace your food habit in a sense that will not interfere with your life. There are lots of websites for gluten containing foods which you should avoid, most groceries and some restaurants are offering gluten-free options too!
