Variable. When large, hiatal hernias can cause chest pain and pressure, and difficulty swallows which could reduce food intake and lead to weight loss. If the colon was also involved with the hiatal hernia, bowel movements could be affected, but this is uncommon.
Should not. A hiatal hernia is just a loosening of the diaphragm allowing part of the stomach to slip up into the chest thereby allowing easier acid reflux to occur into the esophagus.

Is it normal to have daily diarrhea after hiatal hernia surgery and on a pureed diet?

Not normal. C.difficile enterocolitis is a possibility. Often peri-operative antibiotics adversely affect the bacterial content of the colon resulting in an overgrowth of a bug called clostridium difficile. This causes inflammationc of the colon lining with resultant severe diarrhea. Stool culture is needed to make confirm the diagnosis. Not from the surgery. It is very unlikely that these current symptoms are related to your surgery. By far the most common cause of diarrhea is viral infection (enteritis, or gastroenteritis if it involves nausea/vomiting). With any diarrhea, weight loss, dehydration (feeling like you're going to pass out when standing), or fever lasting > 1 day would be cause for concern. Otherwise these things tend to resolve.
