In brief: Controlled exposure

To a food which the practitioner suspects the person had outgrown.
For the sake of brevity it is usually performed as an open challenge (as opposed to a single or double blind manner). The food is incrementally increased in dose at a frequency of every 15-30 minutes until a target dose is reached.

Some people "outgrow" their food allergies.
Depending on the type of the past reactions , testing is done( skin and or blood) to see if their sensitivity has gone away. If so , to be sure, a food challenge is done. This means eating a tiny amount of the food.... Wait a while.. Eat some more, etc. The allergist will monitor you carefully . If you can eat a certain amount, you are no longer allergic.

keep in mind that the presence of allergic antibody alone does not prove allergy to foods; if the food can be eaten without allergic symptoms, then no allergy exists.
