We usually check blood sugars two hours after eating to reflect the status after majority of the rapid acting Insulin that one has taken to cover that meal or snack is gone from the body.
By the time it is two hours after the meal once one's blood sugar should've returned to the target range. If not then a different dose of medication may be necessary to achieve better control.
