What is the difference between "sugar free" and "gluten free" for someone with is insulin resistant (with pcos)? Since anything with gluten = carbs?

Sugar free does not mean carbohydrate free.
It only implies that sugar (for example: high fructose corn syrup, table sugar) isn't added. Sugar free foods still have plenty of carbs and often higher fat content. Sweeteners used are often sugar alcohols like maltitol or sorbitol (may cause diarrhea). Gluten is a wheat protein. Gluten free products have plenty of carbs in them, just not from wheat.
