When I drink coffee my heart seems to skip and/or pause between beats. Is this something to be concerned about?

In brief: Not necessarily

It's likely the caffeine that may be the culprit.
Going to a truly decaffeinated product (because some "decaf" is really just "lower or less caffeine") and seeing if the symptoms are improved is important. If persistent, other cardiovascular causes may be sought, e.g., mitral valve prolapse, though most may be relatively benign. Talk to your doctor for further evaluation if symptoms persists.
