I have an 8-year-old son in perfect health who defecates 9 times daily. What could be the problem?

In brief: More data please
Even healthy appearing kids can have stooling issues.
Volume/texture/stool water/blood, mucous or pus/excessive odor(clears a room)are important additional facts. Talk with your dr about the issue. At that age the kid is likely embarrased by the issue & wants it to stop. The issues could range from food intolerances/irritable bowel/even stool retention with leaking. A good exam & tests should help.

In brief: Needs eval
I agree with first answer. Normal stool evacuation is 2-3 times a day.
9 times a day indicates rapid transit and he may not be absorbing nutrients well. Could be as simple food allergies or too many fruits... A detailed visit will be very helpful.
