The baby's saliva contains enzymes that break down proteins in formula or baby food & a little saliva always gets into the bottle or jar. It's better to give smaller portions initially, because you can always give a little more if your baby indicates (s)he's still hungry.
If you spoon-feed from a jar of baby food & put the leftover portion in the fridge, it'll be liquid by the next day.
