Why are carbs disliked way too much? After all they play a critical role in overall health.

Carbs. The reason is that our western diet has an over abundance of carbs. When you eat these carbs they raise the blood sugar and stimulate your body to produce Insulin to bring the carb into the cells where the energy is stored as fat. You then get a low blood sugar that makes you very hungry for more carbs and thus the cycle continues toward obesity and poor health.
True, but.... The average us person eats an overabundance of carbs leading to an Insulin surge which can lead to Insulin insensitivity, diabetes, and weight gain.
