.. Wheat has many different proteins that a person can be allergic to. Celiac disease (gluten allergy/enteropathy) is worse than wheat allergy because there is a damaging intestinal reaction. Celiac disease is genetic, but can sometimes be so mild that one may not notice symptoms until adulthood.
