In brief: Dental exam
You may notice a fetid odor or loosening teeth or the gum tissue between your teeth will get gray or white and flatten; but the only sure diagnosis is from a periodontal exam and x-rays with your dentist.

In brief: Poor hygiene
Lets face it these conditions don't get there by brushing daily and using floss daily.
I doubt that an atrocius diet could be at fault for these gum problems, if so you would be complaining of a multitude of cavities. See your dentist and get on a proper hygiene regimen if you are serious about keeping your teeth and staying healthy.

In brief: Gum Disease
First sign of gum disease is something as simple as blood in your toothbrush.
Most people ignore this because there is usually no pain associated with gum disease until it is on the advance stage. Tooth movement or drifting creating gaps between teeth, gum recession and bad breath are also signs of the disease. The only way to diagnose it is to have a full periodontal examination by a dentist.
