This is a broad Q. Do you mean hormones in a collective term ? Diet plays an important role in day to day cellular activity. If there is hormonal disturbance due to autoimmune destruction, then there is little to do in terms of changing diet. On the other hand, high Insulin state needs low car diet, high triglycerides need increased omega 3 intake, etc.
