How different will my life/eating habits be after my gallbladder is removed? I will have my gallbladder removed because of gallstones and infection.

In brief: Better!

Most people who have their gallbladder removed have no side effects; about one-in-five will get (transient) diarrhea associated with fatty food intake.
Even in the worst-case scenario, meds can be used to control this, albeit rarely necessary. Most importantly, you will never get a gallbladder attack again! good luck.
