In brief: Big or small?

Small cavities are taken care of with bonded tooth colored composite fillings.
When cavities get bigger and the strength of the tooth is compromised a porcelain restoration that covers most of or all of the tooth is used. This would be called a veneer, or partial crown or full crown depending on the size of the cavity.

In brief: 2 step

The first step is to remove the decay, the infected tooth material, and any overlying unsupported enamel.
Then the second step is to replace the damaged part of the tooth with one of many restorative materials. The material, procedure, and choice of restoration depends on the amount of damage to the tooth, it's post-restoration function, and which part of the tooth was damaged.

In brief: As all others

Using a high speed drill we remove the decay and unsupported enamel and then bond in a composite resim material that will (if done right) blend in to your existing teeth, then polish and seal it to make it look as good as we can.
Most times they are not noticeable but over the years they may darken and need to be replaced.

In brief: Veneers

There are several options, depending on the location, size, and aesthetic requirements resins restorations or fillings are the most common but as they get larger they loose strength and become more noticeable veneers are the most aesthetic restoration and can be used on larger areas.
When there is not enough tooth left for a veneer a crown in the only option..

In brief: Remove decay

After the decay is removed the dentist depending on size can use a composite and match the shade of your tooth.
