Too many calories makes you fat. Beyond that, the answer depends on the specific nutrient. It's easy to consume too much chocolate (for me, anyway), but not so easy to consume too much celery. For vitamins, the answer is also yes, but depends on which. It's much easier to take too much a, e, d, or k (fat soluble) than b or c etc. (water soluble).
