In brief: Meat and veggies

Both diabetics and celiacs would be able to tolerate protein from meat, chicken, fish and turkey.
They both would tolerate any vegetable. As far as carbohydrates go, the celiac prevents you from having any wheat, rye, or barley product. Most fresh fruits, rice, corn, and yams would be allowed. You need to go over the amounts with a diabetic educator. Beans and legumes would also be tolerated.

In brief: Celiac Disease?

You need to see a registered dietician specially trained in diabetes education, you not only need to start counting grams of carbohydrates but also avoid gluten.
Write down everything you eat and drink 3 days prior to meeting her and take this diary with you.
