In brief: Hard to explain

While some people are genetically more at risk, it is not inherited.
At some point in life the victims immune system decides to react to gluten based protein as if it were an invading germ. It creates antibodies that mistakenly attack your intestinal tissues as if they were that germ & you become symptomatic. Why it happens is unknown, a fluke in the immune system.

Autoimmune; new research shows perhaps an infectious "trigger" in some. Can be tested if in question. Blood tests for antibody, with biopsy of bowel to confirm. Genetic test may help to exclude. Some people have"sensitivity" w/ gut symptoms, eating grains (gluten continuing foods). These may be due to carbs, not protein in the grains that are not well digested.
