Can I take omeprazole at night? Say, before bedtime? It says take 30 minutes before a meal, but can I just take it before bed instead?

In brief: Yes
You can take Omeprazole before bed but ideally it should be taken before you eat because it activates more readily after it is on board and then you eat a meal.
Often taking it in the am seems to work best before breakfast.
