In brief: Adrenaline

This can be due to a number of things but one that is very common is the adrenaline/cortisol surge that happens after an acute waking such as with sleep apnea.
Stress can do this but it is not as acute as what you are talking about. Usually someone that wakes up with stress feels sleepy but cannot "turn mind off." look for other signs of apnea: snoring, daytime sleepiness, fatigue, nocturia...
