In brief: Food poisoning
Less likely food poisoning because the offending agent usually takes 4-12 hours to produce symptoms.
Probably a chemical irritant to the mucosal lining. The body is great at trying to get rid of irritants. However, the fish did not cause the diarrhea. Whatever irritated the lining increased the movement of the intestines which moved the stool contents along at a faster rate-thus diarrhea.
