Why does some chest heart pain only occur at night while lying in bed?

It depends... On occasion, one might have an inflammatory process around the outside of the heart called pericarditis, which can cause chest pain that is worse when lying flat on your back. This is related to increased contact between the two layers of inflamed pericardium in this position. However, it is far more common for musculoskeletal chest pains, or acid reflux, to cause this type of symptom.
