Coconut oil seems to have a former bad rap, but has become all the rage in several cooking circles these days. Also, some good value for grape seed oil. At least these oils do not easily catch on fire, like olive oil.

Readers will notice that Dr. Khanna's answer & the other answers of this page are contradictory. What is behind the differences? Answer: Ancel Keys' long promoted theories about saturated fats vs. both previous evidence & research over the last >30 years which contradict Keys' theory. Many physicians still promote Keys' ideas; the food industry & USDA have been strong marketers of Keys theories.

Be sure you are using a high quality virgin (not extra virgin) olive oil that is stored in a dark bottle.
Other excellent oils include virgin coconut, palm oil (great source of vit E), avocado oil, macadamia nut oil. I do not recommend any vegetable oils (soybean, corn, etc), nor canola oil. My opinion is that HIGH OLEIC sunflower/safflower oil is fine.
