Is 160 lbs an acceptable weight for a 22 year old male who is 6 ft 4 in? I can't seem to gain more weight even if I force myself to eat alot.

In brief: It's fine

At 6 ft 4 in and 160 lbs, your bmi is 19.
5 kg/m2. This is within what is considered normal range for bmi -- 18.5-24.9. Bmi is the ratio of weight in kilograms to height in meters squared and it is a pretty good measure of body fat in most people. Rather than force yourself to eat more than you need you could try resistance training if you want to gain some muscle mass.
