To help understand why carb intake drives fat storage in the liver, study: http://goo.gl/XBxNBS, an introduction to how our body stores energy, why very little is stored as carbohydrate (liver & muscle), but instead is converted to triglycerides fat molecules, exported & stored within fat cells around body both visceral & under skin. If liver cannot export fast enough, then steatosis=fatty liver.
