In brief: Please see below.
Amount varies based on size, metabolic rate, and activity level of the child, but a daily average: 32 oz.
Dairy products 2-3 oz. Protein 3-4 oz. Vegetables 1 bowl whole grain cereal or pasta, or 2 slices whole wheat bread 1/2 of each of three different fruits (i.e., banana, apple, orange) if the child wants to eat more of healthy food and his/her weight and height growth are normal, it's ok.

In brief: Depends
Every child is different, but generally they eat what they need, you just need to offer health choices.
Sometimes it doesn't seem like they eat enough, but 2-3 year old dont eat large amounts, so should encourage healthy snacks throughout the day. As long as they are following growth curves correctly, should be fine.
