In brief: Let's clarify

Entamoeba histolytica doesn't cause ulcerative colitis but it can mimic it.
It can return whenever you're re-exposed or if the Rx didn't kill all the organisms. "Fast food" isn't the cause of ulcerative colitis. You need to find out what you've got -- especially if it's true ulcerative colitis, being a well-educated patient is key to getting a good outcome.

In brief: It can relapse

Ameba cysts must be eliminated by a separate drug from that uses for infection.
If not, it can relapse. Ameba is from contaminated water, so any type of food can harbor it, especially if prepared by someone infected and unwashed. In some areas of the world ameba is so prevalent that re-infection is frequent.

In brief: Yes

E. Hystolitica can cause a colitis indistinguishable from UC.
The proper treatment for E. Histolitica requires Flagyl or Tinidazole follow by a drug to kill the cysts ( Paromomycin or Iodoxyl ). It can also trigger UC after treatment.

In brief: Should be cured

Treatment of E histolytica infections that are symptomatic is with two drugs.
Asymptomatic patiens are treated with one treated with one drug. Once the infection has been cured, you can be reinfected, but not from fast food. It has to be treansmitted by ingesting food or water that is contaminated or by having sex with infected persons.
