If you lose one testicle, can you still make both boy babies and girl babies?

In brief: Yes you can

Sex of a baby is determined by the sperm.
50% of a man's sperm carry a y chromosome, which after fertilization will result in boy, and likewise 59% carry an x chromosome which will result in a girl. Most men with a single testicle are quite fertile. Good luck.

If you are otherwise healthy there should be no reason that you should have any trouble having children.
You should have the same likelihood of fathering boys and girls as you did before your testcle was removed.
