In brief: Use your resources

A consultation with a dietician may be immensely helpful; call a local hospital and ask to speak with a dietitian to determine if they have an outpatient program or know of someone in your area who offers such services.
There are many web-based resources, and web sites that will give you a list of foods or recipes you can purchase from them that are safe for your given combo of allergies.

In brief: A few ideas

1. Severe food allergies often taken to mean multiple allergies.
More often multiple sensitizations are mistaken for allergy. Only 1% of kids with food allergies are allergic to >3 foods. 2. Job 1: provide enough calories & protein. This can be accomplished with neocate/elecare. 3. Start with limited number of foods known to be safe. 4. Add foods 1-2x/week. 5. Allergists helpful; nutritionists not.
