In brief: Heart condition
You may have a condition called inappropriate sinus tachycardia or sinus re entrant tachycardia .
I assume your doctor has ruled out thyroid condition and other medical conditions that can cause tachycardia including anemia . Check with a cardiologist.

In brief: Sinus Tachycardia
This is likely sinus tachycardia, seemingly random swings in heart rate are not uncommon and rarely dangerous.
These swings are worsened by poor hydration. Try to increase your water intake... It may help.
