Is the blood from an old person different than that of a child, and could one give blood to the other?

In brief: Blood transfusion
There is no reason that an older person could not give blood for a transfusion to a child as long as their blood types and other "crossmatching " test are compatible.
A big differance in age is not in itself a problem regarding transfusion.
