In brief: Usually

Lipomas have a characteristic soft and somewhat mobile feel on exam. They don't change much over time.
Cancer doing this would be unusual and your doctors are likely correct in their conclusion. Ultrasound of lipomas can show a rounded fatty area or nothing (with the lipoma blending into the surrounding fat). Sometimes ultrasound is done when patients feel they need further evidence of noncancer.
