In brief: Hard to say

Diabetics do tend to get more and prolonged infections, esp if they have poor glycemic control, vascular insufficiency or neuropathy, but little work has been done on salmonella food poisoning in diabetics.
It seems more common but much more study has focused on salmonella infecting the bone after a foot infection. I'd talk to your doctor if symptoms persist or worsen.
