Hygeinists are trained to clean teeth, ortho assistants are trained to aid in the application and treatment of orthodontic braces.
The first would work for a dentist, the later would work for an orthodontist. Both can realize similar pay scales over time (if you are considering a career direction).

Please also know that a Hygienist requires a 2 year college training program and state licensure. An assistant may be trained in a technical school or by their employer, and usually does not require licensure.
