Shyness manifests in all sorts of ways, and people deal with it in many ways too, including drinking too much.
However, blaming a chronic drinking problem on shyness probably misses the point. Alcoholism is a disorder, and we often look for "explanations" as a way of avoiding blame or denying there is a problem. "i'm just shy" is not an answer to why someone drinks to excess.
