In brief: Fatty food

Avoid fatty food initially and then slowly add as tolerated.

In brief: NO diet restrictions

Presumably you had a 'fatty-food intolerance' before gallbladder surgery.
Generally after gallbladder removal there are no diet restrictions. You may experience 'looser stools' after surgery due to 'free-flow' of bile in G.I. Tract but that can be counter-acted with 'a little' metamucil 3x/day.
