Hiatal hernia: Symptoms of hiatal hernia are usually heartburn and esophageal acid reflux. Sometimes marked acid reflux can be associated with asthma type issues. Not sure, but: Make sure what you are feeling is indeed hypoglycemia (sweaty, hungry, jittery, weak, tired). Not sure if the head symptoms are related. A strategy to avoid hypoglycemic episodes is to avoid high glycemic index foods (stay with foods under index of 60), don't exercise for at least 60 minutes after eating, eat more healthy fats and lower carbs in general. This is one reason for coughing at night, as blood reaches the upper lobes of the lung, much more so than standing or sitting during the day.
