Nutritional stuff?: Ask your doctor, but it might be nutritional deficiences or an acid/alkaline imbalance. I personally had similar finger symptoms that responded well to rinsing with diluted plain white vinegar. Flaking returned daily and went away with another rinse. Sometimes contact dermatitis involved with contact with allergens such as nickel can cause peeling skin, as can hand eczema, vitamin deficiencies, and other skin conditions.
