Many causes: Anemia (low hemoglobin) can be a result of hypothyroidism through multiple mechanisms. Low thyroid causes less production of blood cells resulting in a "normochromic" anemia. It can also be associated with B12 deficiency and cause a "macrocytic" anemia. It can also cause less iron absorption and result in a "microcytic" anemia. Not likely your cyst: Apparently your cyst is non-functional, so unless there is infection, it should not be causing your readings. Eosinophils can mean a parasitic infection or allergic reaction, while high WBC can mean an infection. Your low hb can be from blood loss or renal issue, and hypothyroid can have many causes. Recovering from being anaemic means you will need to eat more as you replace your body's stores. This will be much quicker and easier if you eat red meat or take iron supplements.

See a pediatrician: Mesenteric adenitis (inflammation of lymph-nodes of the intestine), can be mistaken for appendicitis. I'll bet a ct was done. Viral and other self-limited GI track infections cause it. But significant underlying conditions and serious infections, although much more rare, can cause this also. 8 weeks is getting a bit too long, especially with other symptoms, to ignore.
