Ketosis describes a state of increased ketone bodies in the blood stream. Ketone bodies are generated from the breakdown of lipids (fat) when there are low levels of blood sugar or cells are not able to absorb the blood sugar present, as in diabetic ketoacidosis. Some diets which limit carbohydrates cause low blood sugar and may also result in ketosis. QUALITY NOT QUANTITY: The more complex carbs are better in this regard. White flour carbs are very quickly absorbed and can cause a sudden surge in Insulin levels, which will invariably drop you like a bad marriage within a few hours. More complex carbs will get absorbed slower, hence preventing or decreasing Insulin spikes. As a rule of thumb, never eat carbs by themselves, no more than 20-30 grams per meal. ...Read more

Yes, as long as...: Vegan diets when done properly are very healthy. High carb diets can lead to weight gain but that is what you are aiming for. Not all carbs are created equal. Minimize simple carbs (sugars, starches) and emphasize complex carbs. No need to avoid healthy fats like olive oil, coconut oil and nuts. Make sure you are getting enough protein. Depends on type: Not all carbs are created equal- some, like sugars and white bread and rice, raise blood sugar quickly, while others, like apples and carrots, raise blood sugar more slowly.
