No worry: It is not uncommon after a tonsillectomy, that children get a white coating on the tongue due to build up of dead cells on the surface from lack of friction from eating and mild dehydration. Push fluids, and when your child is eating normally again, it should resolve. Possible thrush: I hope your son is feeling better after having his tonsils removed. What you are describing could likely be thrush which is a yeast infection due to post surgery antibiotics.
