Detect alcohol use: Ethyl glucuronide and ethyl sulfate are metabolites of alcohol that can persist for several days rather than only several hours, as the actual blood alcohol concentration (BAC) does. It can detect drinking in as much as a 72 hour window. So, an individual who is not supposed to be drinking may have zero BAC, but an EtG of several hundred to several thousand if they drank the day before.
Not that I know of: I am not aware of any versions of kimchi that would contain active amounts of ethanol. Ethyl glucuronide is highly specific for ethanol, and unless your version is being made with cooking wine or some other form of beverage alcohol, I would not expect EtG to be positive.
It depends: While not perfect, it provides an opportunity for your provider to assess whether you've consumed much alcohol in the past two weeks or so. Depending on lab cutoffs and the concentration of the urine the doctor can have a good guess whether you might be using more alcohol than is good for you. Need clarification: Etg is a test for ethyl glucuronide. It is a metabolite of ethanol (the alcohol in our liquors, beer, wine, etc). It can remain in your body up to 80 hours after drinking alcohol. Samhsa (substance abuse & mental health services administration) a govt entity, doesn't recommend this test be used for legal reasons because simple using hand sanitizer can make you test positive.
Average - 5 days: An etg test is positive, on average, for five days after intake of alcohol. To be safe, it would be better to avoid alcohol for a week or more, before the test. It would be better to abstain from alcohol entirely as you are not supposed to be taking any.
