The two symmetrical bumps on my mouth's roof behind front teeth, sometimes one of mine feels sore after chewing gum, eating or smoking. Why?

Irritation: The "bumps" are sore because they are irritated. The question is, what are those "bumps"? Lesions like that can be as benign as a torus palatinus, or they could be more serious, especially since you are a smoker. Have them evaluated by your dentist... It may save your life.

Without: Without a clinical exam you have not provided enough information to hazard a guess as to what your problem is. The first impression is that you might be brushing too aggressively in that area or that you are clenching you teeth for extended periods of time. You need to schedule an exam with you dentist to get to the bottom of the problem and to be given treatment recommendations.

Is: Is this the only lesion, or do you have any others? It could be an aphthous ulcer, which may have formed from the toothbrush trauma. They usually last a week to ten days. A differential diagnosis of a lesion, over the internet, sight unseen, is not prudent. Your best bet is to go to your dentist or an oral surgeon to have them take a look to be absolutely sure.

I noticed a small lump under my tongue, behind my front teeth that seems to be at the bottom of my gums. It's painless and moveable. It hasn't grown.?

Suspicious lump?: Regardless the cause... I would advise you to have the lump under the tongue examined by a dentist or dental specialist (e.g. oral surgeon, OFP). Any suspicious lump that does not resolve itself in 2-3 weeks should be evaluated.
