Potatoes are in the environmental working group's dirty dozen foods-they're high in pesticides if not organic & are readily converted to sugar so raise blood sugar, causing weight gain & increased risk of diabetes. Gaining weight: That's great that you are not consuming a lot of carbs and are watching your diet. You also need to look at the overall quantity (and calories) of what you are eating as well. Are you exercising too? Without physical activity (cardio), it is hard to lose weight. You have to burn more calories than you are consuming. Does not matter: Since 90% of the cholesterol is produced by the body regardless of your diet, the above would not noticeably affect your cholesterol level. Do note that too much carb may not be good for your health. I don't believe extreme diet does anyone any good.
